Bring the pickle and spices to a boil with the beets and onions. I like my beets crunchy, so I don't precook them, but I guess you could if you want. Pour the pickle into a jar over the eggs and onions. Throw in the fridge and start eating after a couple days. They want to be eaten within a couple weeks. The purple/pink eggs are wonderful to use in deviled eggs if someone invites you to a potluck :).
