Sarah's Granola Bars

On a Mazama Hike, Sarah shared these and they were awesome. I asked for the recipe:

  • 3/4 c peanut butter
  • 3/4 c sugar
  • 1 c Karo Syrup (or Honey or mix of the two) - I use a combination of brown rice syrup (about 3/4 of a cup) and honey (1/4 cup)

Heat in microwave safe bowl (very large bowl to accommodate more ingredients) for 1 minute. Stir. Heat another minute or until all ingredients mix well together and peanut butter is soft. I actually do this on the stove b/c I don't have a microwave. Be careful not to burn the mixture. Since I heat this in a pan on the stove, I put all of the other ingredients in a large bowl, I then add the hot mixture to the dry ingredients and mix them together.

Add:

  • 3 c of Grape Nuts
  • 1/2 c Cheerios
  • 2/3 c dried cranberries - I sometimes use a combination of raisins and cranberries, or if I don't have cranberries, I just use raisins.
  • 2/3 c sunflower seeds
  • 2/3 c chocolate chips

Mix until well blended. Pour into greased 9×13 inch pan. Let cool and cut into squares. Enjoy.
